If you've ever craved a platter of sizzling nachos or a pan of crispy tater tots, my buffalo chicken totchos (tater tot nachos) is the recipe for you. Crispy tater tots with buffalo chicken sauce and melted cheese, topped with blue cheese dressing: need I say more? These tater tot nachos (aka totchos) are perfect as a snack, side dish, lunchdinner or appetizer for Father's Day (or anytime). Everyone will tear them up! 

These buffalo chicken tater tot nachos are really easy to make, too. All you'll need for these over-the-top delicious potato nachos are frozen tater tots, shredded cooked rotisserie chicken, hot sauce, blue cheese dressing, shredded cheese, green onion and grated Parmesan cheese. The totchos are layered together to form an amazing tower of cheesy, spicy, crunchy goodness the whole family will want to dig into. 

If you prefer beef or pork over chicken, you can easily substitute cooked chopped steak or pork. Fancy it up with your favorite nacho toppings like guacamole, sour cream, jalapenos or black olives.

Ingredients

  • 2 pounds frozen tater tots
  • 2 cups shredded rotisserie chicken
  • 1/2 cup hot sauce
  • 1/4 cup blue cheese dressing
  • 2 cups shredded mixed cheese
  • 1/4 cup sliced green onion
  • 1/4 cup grated Parmesan cheese

Here's how to make it:

  1. Bake the frozen tater tots on a baking sheet according to the package directions. 
  2. While the tots bake, mix the hot sauce and blue cheese dressing in a small bowl. Combine the hot sauce mixture with the shredded chicken
  3. Remove tots from oven. Separate half of the tots off the baking sheet. Top the remaining tots on the sheet pan with half of the chicken and shredded cheese, then repeat the layers like building a lasagna ending with the cheese. Return smothered tots to the oven and heat through until the cheese is melted, about 10 minutes.
  4. Remove from the oven, drizzle with additional hot sauce and dressing, and sprinkle with crumbled blue cheese, sliced green onions and Parmesan cheese.
