Crispy Baked Rotisserie Chicken Thighs Recipe: No Wobbly Skin Here Poultry Dinner Budget-friendly

Give me a piece of bone-in chicken with super crispy, flavorful skin and I am in heaven. While I absolutely love rotisserie chickens, the skin is sometimes kind of wobbly. And because it's just the two of us, we don't always want a whole chicken. The solution? This crispy baked rotisserie-flavored chicken thighs recipe. Delicious!

This is a chicken dinner you can whip at on short notice because you probably have everything already in your kitchen: chicken thighs (or your favorite chicken pieces), kosher salt, black pepper, smoked paprika, garlic powder, onion powder, ground thyme and cayenne. The skin is lifted gently from the meat so it can be seasoned along with the outside of the chicken (this also helps the chicken skin crisp up). Drizzle with a little olive oil and bake until golden, crispy and cooked through.

If you don't have ground thyme and just dried thyme leaves, no problem! I whirled my thyme leaves in a spice grinder until it was powder. It was simple and took just a few seconds.

Serve these rotisserie chicken thighs with your favorite side dishes. I served mine with broccoli and a garden salad with homemade ranch dressing.

Ingredients

  • 4 - 6 bone-in chicken thighs (or your favorite chicken pieces
  • 1 - 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground thyme
  • dash of ground cayenne (optional)

Here's how to make it: 

  1. Combine the kosher salt, black pepper, paprika, garlic powder, onion powder, ground thyme and cayenne, if using, in a small bowl.
  2. Put the chicken thighs into an oiled baking dish. Gently use your fingers to lift the chicken skin from the meat without detaching it. Season all sides and underneath the skin with the seasoning mix. Drizzle the chicken with a little olive oil.
  3. Bake the chicken in a preheated 375-degree F oven for about 40 minutes or until cooked through and crispy (165 degrees F internal temperature).
