The gluten-free, high-protein bean dip is made with a can of refried beans, chunky salsa, shredded Monterey Jack cheese, shredded cheddar cheese, sour cream, cream cheese, chili powder and ground cumin. The microwave is the fastest, but the slow-cooker method will keep the dip warm all day. No matter which way you cook it, this cheesy bean dip is so easy to make!

Ingredients
- 16 ounces (1 can) refried beans
- 1 cup chunky salsa
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 3/4 cup sour cream
- 3 ounces cream cheese, softened
- 1 tablespoon chili powder
- 1/3 teaspoon ground cumin
Here's how to make it:
- Combine all the ingredients and mix well. (If you like, you could add some cooked, taco-seasoned ground beef or even chorizo into the dip.)
- To make it in a slow cooker, put the mixture into a 1 1/2-quart slow cooker. Cover and cook on high for about 2 hours, stirring occasionally.
- To make it in the oven, put the mixture into a baking dish and bake at 350 degrees F for about 20 minutes.
- To make in the microwave, put the mixture into a microwave-safe bowl. Cook for about 5 minutes or until heated through. Serve. Store the dip in an airtight container in the fridge. Reheat in the microwave.
