Ingredients
- 1/2 cup (1 stick) butter, softened
- 1 cup plus 2 tablespoons granulated sugar (divided)
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1 1/3 cups all-purpose flour
- 1 1/4 teaspoons baking powder
- large pinch of salt
- 1/2 cup sour cream
- 1 pound (16 ounces) strawberries, stems removed and cut in half
Here's how to make it:
- Beat the butter and 1 cup of sugar with an electric mixer until light and fluffy, about 2 minutes. Add the eggs, one at a time, and beat well. Beat in the vanilla.
- Add the flour, baking powder and salt. Mix until combined. Add the sour cream and mix until incorporated.
- Fold in the strawberries.
- Spread the batter into a buttered 9-inch cast iron skillet or ovenproof skillet. Sprinkle with the remaining sugar.
- Bake in a preheated 350-degree F oven for about 40 minutes or until a toothpick comes out clean. Cool before serving.
