Ingredients
Bread
- 1/4 cup vegetable oil
- 4 tablespoons butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1 1/2 cups flour
- 1 teaspoon baking powder
- large pinch of salt
- 1/2 cup buttermilk
- 3/4 teaspoon ground cinnamon
Cinnamon-Sugar Coating
- 1/2 cup (1 stick) butter, melted
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
Here's how to make it:
- Whisk together the vegetable oil, butter and sugar in a bowl. Add the eggs and vanilla. Mix well.
- Add the flour, baking powder, salt and buttermilk. Stir until just combined. (Don't have buttermilk? No worries, make this homemade buttermilk. For a gluten-free loaf, use gluten-free flour.)
- Remove 1/2 cup of the batter into a small bowl. Stir in the cinnamon. (You could add other warm baking spices to this bread like nutmeg, cardamom or ginger.)
- Pour half of the bread batter into a greased 9x5-inch loaf pan. Spoon half of the cinnamon batter over the top. Top with the remaining batter without the cinnamon, then add the remaining cinnamon batter. Use a butter knife and swirl the batters together.
- Bake in a preheated 350-degree F oven for about 45 minutes or until a toothpick comes out clean. Remove the bread from the oven and let it cool about 10 minutes before removing from the pan.
- While the bread cools, put the melted butter into a shallow dish. Stir together the granulated sugar, brown sugar and cinnamon in another shallow dish. When you can pick up the bread, dip all the sides in the butter and then coat all sides with the cinnamon-sugar mixture. Let the bread continue to cool or slice and serve warm. Store any leftover bread in an airtight container.
