My grandma was a master baker. Not officially, but to her family she was. Her pie crusts were homemade, tender and flaky. I have yet to master a pie crust, and to be honest, have kind of stopped trying to. I buy refrigerated or frozen pie crusts and call it a day. So I love it when I find a pie recipe that doesn't have a crust. That's my kind of pie!
This easy brownie pie recipe doesn't have a crust, requires only one bowl, has minimal ingredients and is quick to prep. The fudgy chocolate pie is made with eggs, granulated sugar, butter, flour, cocoa powder, salt and vanilla. Kahlua, a coffee liqueur, is an optional ingredient, but add it if you have it (you could also use Bailey's).
The ingredients are beaten with an electric mixer for about three to four minutes, then poured into a springform pan or pie plate and baked for about 20 to 30 minutes. You want the pie just set (doesn't jiggle) and it should look dry. It will sink as it cools, which it is supposed to do.
Serve this chocolate brownie pie for dessert with whipped cream or warm with vanilla ice cream.

Ingredients
- 2 eggs
- 1 cup granulated sugar
- 1/2 cup (1 stick) butter, softened
- 1/2 cup flour (all-purpose or 1:1 gluten-free flour)
- 1/4 cup cocoa powder
- pinch of salt
- 1 teaspoon vanilla
- 1 tablespoon Kahlua (optional)
Here's how to make it:
- Combine all the ingredients in a bowl. Beat with an electric mixer on medium speed for about 3 to 4 minutes. (You could fold in some chopped nuts to the batter before baking. For a gluten-free pie, use gluten-free flour.)
- Pour the batter into a greased 9-inch springform pie or 9-inch pie plate. (If you prefer, line the bottom of the springform pan with parchment paper.)
- Bake in a preheated 350-degree F oven for 20 to 30 minutes or until pie is just set and doe not wiggle (top should look dry). Remove and cool. Serve. Store the pie in an airtight container. If you want the pie warm, reheat in the microwave.
