Quick baked chicken recipes with minimal ingredients are a favorite at my house – and at 30Seconds. From French chicken (fan favorite) to ranch chicken to orange chicken to garlic chicken to German chicken to harissa chicken, we've got a flavor profile to please pretty much anyone. While we have lots of lemon chicken recipes, we didn't have a crispy baked lemon pepper chicken recipe with just four simple ingredients, until now. This easy baked chicken is the perfect weeknight dinner.

This savory chicken baked chicken recipe is so easy. Simply sprinkle chicken drumsticks or thighs (or your favorite chicken pieces) liberally with lemon-pepper seasoning and put them into a baking dish. Add some thick slices of lemon, drizzle with oil oil and bake for about 45 minutes or until the chicken is cooked completely through and crispy. To get the crispiest skin, turn the oven temperature up to about 450 degrees F for the the last few minutes of cooking. You could also broil it for a couple minutes, but don't walk away! You do not want to burn the skin.

Serve this easy lemon pepper baked chicken for dinner with your favorite side dishes. I served it with roasted brussels sprouts and a quinoa mix. Squeeze the pulp and juice out of the charred lemons onto the chicken. It adds so much freshness and flavor!

  • I used Kinder's Lemon Pepper Seasoning, but use your favorite. Check the label to see if your lemon-pepper seasoning has salt, which can affect how much extra salt you add to the dish. If your lemon-pepper seasoning has salt, it will affect the amount of sodium in the recipe. 
  • For easier cleanup, line the baking dish with aluminum foil.
  • For color, sprinkle with some parsley flakes.

Here's how to make it: 

  1. Drizzle a baking dish with a little olive oil. Season the chicken on both sides with lemon pepper seasoning. Put the seasoned chicken and lemon slices into the baking dish. Drizzle with olive oil.
  2. Bake in a preheated 350-degree F oven for about 45 minutes or until chicken is crispy and cooked through (165 degrees F internal temperature). To crisp up the skin more, turn the oven up to 450 degrees for the last few minutes of cooking.
