Sweet Vanilla Popcorn Recipe: When Plain Popcorn Just Won't Do Snacks Desserts

Popcorn is an iconic snack. Who hasn't munched on buttery theater popcorn while watching a movie or binge-watching a TV series? But who says it has to just be plain popcorn or buttered popcorn? This vanilla popcorn recipe is simple, vanilla goodness and will satisfy your sweet tooth.

To make this simple popcorn snack recipe, start by popping some popcorn on the stovetop or in the microwave. You could even buy pre-popped popcorn and save some time. A mixture of granulated sugar, butter, light corn syrup, baking soda and vanilla is cooked together in a saucepot. The sweet buttery vanilla mixture is poured over the popcorn and tossed to coat every kernel. Let it cool until you can break it up easily into pieces. You are now ready to snack!

Store this sweet popcorn in an airtight container. Serve it in popcorn bowls as a snack or for dessert. You could even use this vanilla popcorn as garnish for pies, cheesecakes or cakes. This is a fun birthday snack, too, or party favor.

Ingredients

  • 3 quarts popped popcorn
  • 1 cup granulated sugar
  • 1/2 cup butter
  • 1/4 cup light corn syrup
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon vanilla

Here's how to make it:

  1. In a saucepot, combine the sugar, butter and corn syrup. Bring to a boil over medium heat and cook, stirring, until golden, about 2 minutes. Remove from the heat and stir in the baking soda and vanilla.
  2. Put the popcorn into a large bowl. Pour the sugar mixture over the popcorn and toss to coat. Cool slightly then break the popcorn apart.
