Asian-Inspired Snow Pea, Radish & Cucumber Salad Recipe: A Refreshing Side Dish Salads Lunch Side Dishes Vegetables

My grandma had a Pyrex dish of sour cucumbers that would sit out on her counter when she made certain dishes, like fried chicken, chicken-fried steak, fried catfish, meatloaf and pot roast. Well, lots of dishes! They were simple cucumbers and onions that soaked in vinegar and a little water until sour. We loved them. After a trip to the farmers market, I had snow peas, cucumbers and radishes that needed to be used. Enter this Asian-inspired cucumber salad with snow peas and radishes.

Cucumber and radishes are thinly sliced and tossed together with snows peas. The dressing that's drizzled over the fresh vegetables is simply seasoned rice wine vinegar and sesame oil. If you have them, sprinkle with some healthy sesame seeds for garnish.

This refreshing and simple cucumber salad goes well at dinner with chicken, steak, pork chops and even fish. For lunch, spoon the salad over lettuce, arugula or baby spinach and top with a can of tuna or chopped cooked chicken. If you have time, let the salad sit so the flavors can blend. Store the leftover salad on the counter, covered, or in the refrigerator.

Ingredients

  • 1 cucumber, sliced thin
  • 2 cups thinly sliced radishes
  • 2 cups snow peas
  • 1 tablespoon seasoned rice wine vinegar
  • 2 teaspoons sesame oil
  • sesame seeds, for garnish (optional)

Here's how to make it: 

  1. Combine the cucumber, radishes and snow peas in a bowl. 
  2. Stir together the rice wine vinegar and sesame oil in a small bowl. 
  3. Drizzle the vinegar mixture over the vegetables. Toss to coat. Season with salt and pepper. Garnish with sesame seeds, if desired.
