Such a simple and delicious chicken dinner.

So this recipe is delicious without a doubt, but 40min at 400F is wishful thinking at best. My chicken and potatoes were definitely still raw. I then did another 20min at 425F, still not enough. At that point I increased to 450F for another 25min, and at that point it was finally done. The time and temp must be tweaked on this dish or you will serve pink chicken to your guests. Next time I’m going to try 450F from the beginning for 1hr and see where it gets me.

Glad you enjoyed the recipe. But there are so many variables when it comes to cooking time. The size of the chicken pieces, for example, and all ovens vary. It's best to use a food thermometer and check for 165 degrees F internal temperature. Chicken pieces rarely take over an hour to cook in the oven. Have you put a thermometer in your oven to check it?
