Moist Brown Sugar Oatmeal Muffins Recipe: Delicious Weekend Baking Therapy Bread/Muffins Breakfast

Muffin recipes are always fan favorites. Most people love a muffin! Because of the health benefits of oatmeal, oatmeal muffins in particular are popular for breakfast or snacking. This easy brown sugar oatmeal muffin recipe is full of oatmeal goodness and sweet brown sugar.

These moist oatmeal muffins not only have regular flour, but whole-wheat flour for even more nutrition. The batter is a combination of both flours, old-fashioned oats, brown sugar, baking powder, eggs, milk, oil and vanilla. The batter is baked for about 15 minutes. Bet you can almost smell them baking right now.

Keep these brown sugar muffins in an airtight container on the counter so everyone can grab one. The best way to eat them is hot out of the oven with a little butter. But they also pack well for a grab-and-go breakfast or for lunchboxes.

Ingredients

  • 1 cup old-fashioned oats
  • 1 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 3/4 cup brown sugar, packed
  • 2 teaspoons baking powder
  • big pinch of salt
  • 2 eggs
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1 1/2 teaspoons vanilla

Here's how to make it: 

  1. Whisk together the oats, both flours, brown sugar, baking powder and salt. 
  2. In another bowl, stir together the eggs, milk, oil and vanilla. 
  3. Stir the wet ingredients into the dry ingredients until just moistened. 
  4. Fill greased or lined muffin tin cups about 2/3 full with the batter. Bake in a preheated 400-degree F oven for about 15 to 17 minutes.
