Creamy Salmon Chowder Recipe Is What's for Dinner Tonight (Grab a Spoon) Soups Dinner Seafood Lunch

Soup season is year-round in my mind. Creamy soups and chowders are my favorite. Another favorite of mine is salmon, so this easy creamy salmon chowder recipe is right up my alley.

This salmon chowder recipe has a short list of simple ingredients: celery, onion, garlic, potatoes, carrots, fresh dill, chicken broth, cream-style corn, half and half and cooked salmon. If you don't have leftover salmon from a previous meal, the easiest way I've found to cook the salmon for this seafood chowder recipe is in the oven. 

Simply put the salmon onto a baking sheet, season with a little salt and pepper, and bake in a preheated 350-degree F oven for about 12 to 15 minutes depending on thickness of the fish. After it has cooled a bit, use your hands to tear it into chunks.

Serve this fish chowder recipe for lunch or dinner with hot, crusty bread and a salad for a complete meal. Some nights we just eat a bowl of this savory soup while watching television under a warm blanket. There's nothing better, and all you need is a spoon.

Ingredients

  • 2 cups cooked salmon chunks
  • 3 tablespoons butter
  • 1/2 cup chopped celery
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 ounces) chicken broth
  • 1 cup diced potatoes 
  • 1 cup shredded or diced carrots
  • 1 tablespoon chopped fresh dill
  • 1 can (14 ounces) cream-style corn
  • 2 cups half and half

Here's how to make it: 

  1. Melt the butter in a large soup pot. Add the celery, onion and garlic, and cook until tender. 
  2. Add the broth, potatoes, carrot and dill. Season with salt and pepper. Bring to a boil, reduce heat, cover and simmer until potatoes are just tender, about 20 minutes. 
  3. Stir in the corn, cream and cooked salmon. Simmer about 10 more minutes. Taste and add more salt and pepper, if needed.
