30-Minute Mexican Garlic Shrimp Recipe (Camarones al Mojo de Ajo) Seafood Dinner

Camarones al Mojo de Ajo is classic Mexican dish made with just a handful of ingredients, yet it is packed with flavor. Juicy, tender shrimp are coated in a sauce with olive oil, garlic, onion, lime juice, smoked paprika and parsley. It’s flavorful without being spicy, so it’s a family-friendly dinner option.

Ingredients

  • 1 tablespoon smoked paprika
  • 2 teaspoons salt
  • 2 pounds large shrimp (I recommend using defrosted, peeled and deveined shrimp)
  • 1/2 cup butter
  • 1 small red onion, sliced thinly
  • 6 cloves garlic (3 minced and 3 sliced thinly)
  • 1 lime, juiced
  • 1/2 cup chopped fresh parsley (or cilantro, if preferred)
  • crushed red pepper flakes, for serving (optional)
  • fresh black pepper (optional)

Here's how to make it: 

  1. In a small bowl, combine paprika and salt. Season the shrimp with the mixture.
  2. Add the butter to a large frying pan. Melt it over medium heat until it begins to melt. Add the onion and garlic to the skillet and cook for about 5 minutes. 
  3. Add the shrimp and cook for 6 to 8 minutes or until completely cooked through. Add the lime juice and parsley. Sprinkle red pepper flakes and/or fresh black pepper over the top, if desired.
