Ingredients

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 2 teaspoons vanilla 
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • dash of salt
  • 1 cup regular chocolate chips or mini chocolate chips

Here's how to make it: 

  1. Whisk together the pumpkin puree, sugar, eggs, oil, pumpkin pie spice, cinnamon and vanilla in a mixing bowl.
  2. In another bowl, whisk together the flour, baking powder, baking soda and salt. Add to the wet ingredients until just combined. Stir in the chocolate chips. 
  3. Pour the batter into a parchment paper-lined or greased 8x8-inch cake pan. Bake in a preheated 350-degree F oven for about 35 to 40 minutes, or until a toothpick comes out clean.
