  • 1 whole chicken, butterflied
  • 1/2 cup mayonnaise
  • 2 tablespoons butter, melted
  • 1 tablespoon poultry seasoning
  • 5 cloves garlic, minced
  • 2 tablespoons chopped fresh thyme or parsley
  • 4 tablespoons lemon juice

Here's how to make it: 

  1. Season the chicken with salt and pepper. Place the chicken into a roasting pan.
  2. Combine the mayonnaise, butter, poultry seasoning, garlic, herbs and lemon juice. Rub the mixture all over the chicken.
  3. Cover the chicken with the lid or aluminum foil. Bake in a preheated 350-degree F oven for about 40 minutes. Uncover and bake about 10 minutes more to brown the skin. (Internal temperature should be 165 degrees F.)
