30-Minute Indian Shrimp Curry Recipe: When You Need Some Spice in Your Life Seafood Dinner

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1/2 a sweet onion, minced
  • 2 cloves garlic, chopped
  • dash of curry powder (or more to taste)
  • 1 teaspoon ground ginger or grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoons ground turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon red chili powder (Indian-style chili powder or ground cayenne)
  • 1 can (14.5 ounces) diced tomatoes (drained if you’d like a thicker sauce)
  • 1 can (14 ounces) coconut milk
  • 1 teaspoon salt, or to taste
  • 1 pound cooked and peeled shrimp (remove tails)
  • 2 tablespoons chopped fresh cilantro
  • lime wedges, for serving

Here’s how to make it:

  1. Heat the oil in a large skillet over medium heat. Cook the onion in the oil until translucent, about 5 minutes. Remove the skillet from the heat and allow it to cool slightly, for about 2 minutes. 
  2. Add the garlic, curry, ginger, cumin, turmeric, paprika and chili powder (or red chiles) to the onion and stir over low heat. Pour the tomatoes and coconut milk into the skillet. Season with salt. Taste and add more salt, if needed. Cook the mixture at a simmer, stirring occasionally, about 10 minutes. 
  3. Stir the shrimp, fresh cilantro, and dried cilantro into the sauce mixture and cook about 1 more minute. Do not over-cook the shrimp. Serve over rice.
