Chicken thighs are a favorite weeknight dinner because they’re easy, juicy and on the table fast. Boneless and skinless chicken thighs are also still relatively budget friendly, and can feed a crowd (or make excellent leftovers).
This easy one-pan barbecue chicken recipe makes a savory sauce, so we serve it over rice or alone with vegetables if we’re watching our carbs. To make this easy one-pan dinner recipe you will need the following ingredients from your fridge and pantry: boneless/skinless chicken thighs, fresh garlic, extra-virgin olive oil, soy sauce (or tamari for a gluten-free dinner), apple cider vinegar and barbecue sauce.
Serve the juicy barbecue chicken thighs over rice or with vegetables of choice. I served mine with sautéed broccoli and carrots for a quick and easy dinner everyone enjoyed.

Ingredients
- 8 boneless/skinless chicken thighs
- 2 teaspoons garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup soy sauce (or low-sodium soy sauce or gluten-free tamari)
- 2 teaspoons apple cider vinegar
- 1 cup barbecue sauce (I used Sweet Baby Ray’s Barbecue Sauce)
Here's how to make it:
- In a large saucepan on low heat, add the olive oil, garlic, soy sauce, apple cider vinegar and barbecue sauce. Stir to combine.
- Add the chicken. (You could use chicken breasts instead of thighs.) Stir and bring to a boil. Reduce heat and allow to simmer until chicken is cooked, about 20 to 25 minutes. (Chicken is cooked through at 165 degrees F internal temperature on a food thermometer.) Serve. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
