Moist Trail Mix Bread Recipe Is a Sweet Snack or Quick Breakfast Bread/Muffins Breakfast Snacks

I saw a recipe the other day for Sweet Alabama Pecan Bread and decided it sounded good, and I was sure I had some pecans on hand. Nope. But I did have a package of omega-3 trail mix that had pecans (as well as almonds, pepitas and dried cranberries), so I did a little substituting. I’m not sure I could ever follow a recipe as written, just on general principle. (Thanks, Mom!)

This trail mix bread recipe turned out great! The cranberries give it a little tart sweetness. Perfect for a snack, breakfast or even dessert.

Ingredients

Here’s how to make it:

  1. In a large bowl, combine both brown and white sugars with the oil and melted butter. Add eggs and mix until no lumps of sugar remain. Add vanilla, flour and salt. Mix until blended. Fold in the trail mix. Pour batter into a 13x9-inch baking pan that's been sprayed with nonstick cooking spray. 
  2. Bake in a preheated 350-degree F oven for 30 to 35 minutes or until lightly browned and a toothpick inserted in the middle comes out clean. Set it aside for 15 minutes to cool before cutting.
