Olivia Newton-John's Simple Roasted Lemon Chicken Recipe Poultry Dinner

I was 10 years old when Grease was released in theaters in 1978. My friends and I saw the movie over and over – at least until our parents ran out of patience. Olivia Newton-John became the "it" girl for us. Then came skating to Physical and Xanadu at the skating rink. Lots of memories are tied up in Ms. Newton-John. So I, like so many, was saddened to hear of her passing at age 73

One way I know to pay tribute to someone who's passed is to cook their recipes. This is Olivia Newton-John's recipe for lemon chicken from her cookbook, LivWise Cookbook: Easy, Well-Balance and Delicious Recipes for a Healthy, Happy Life. Olivia liked to serve this lemon chicken recipe with roasted sweet potatoes and steamed broccoli or a green salad. Rest in peace, Olivia.

Cook Time: 45 minutes to 1 hour
Total Time: 55 minutes to 1 hour
Servings: 4 to 6

Ingredients

  • 3 pounds organic chicken, rinsed, trimmed of excess fat and patted dry
  • 1 large lemon
  • 2 1/2 tablespoons olive oil or melted butter

Here's how to make it: 

  1. Season the cavity of the chicken with sea salt and freshly ground pepper. Using a fork, pierce the lemon all over and put it inside the cavity. Rub the olive oil or butter all over the outside of the chicken. Season well with salt and pepper. 
  2. Cook in a preheated 400-degree F oven for 45 minutes to 1 hour or until juices run clear when the thigh is pierced with a knife. Remove and let the chicken rest, covered, for about 10 minutes.
