Quick & Easy 4-Ingredient Condensed Milk Lemon Pie Recipe: A Refreshing Slice of Summer Pies Desserts

Lemon anything is on top of my must-eat foods list. Lemon pie is an all-time favorite, especially in the spring and summer months. This easy lemon pie recipe has just four simple ingredients in the filling and is ready to be poured into that pie shell in minutes. It's creamy, tart and so refreshing on a hot day.

All you need to make this simple baked lemon pie is a pie crust, sweetened condensed milk, eggs (just the yolks), lemon juice and lemon zest. The ingredients are beaten together with an electric mixer, poured into the pre-baked pie crust and then baked until the center is set but still slightly wiggles and jiggles. 

Serve this lemon dessert recipe with a dollop of whipped cream. Or, serve it naked with nothing at all. This lemon pie is delish either way.

Lemon Filling

• 2 cans (14 ounces each) sweetened condensed milk
• 3 egg yolks
• 1 cup lemon juice
• 2 tablespoons lemon zest

Recipe Notes

• If you want a more yellow pie, add a few drops of yellow food coloring.

• Squeeze your lemon juice fresh for this lemon pie. Fresh is always best.

Here's how to make it: 

1. Combine all the ingredients in a mixing bowl. Beat with an electric mixer on high until fully combined. Pour the filling into the baked pie crust. 
2. Bake in a preheated 350-degree F oven for about 18 to 20 minutes or until pie still jiggles a little in the middle but set around the edges. Remove to cool before refrigerating to chill completely.
