Hot Chicken Parmesan Sandwich Recipe With Marinara Sauce Sandwiches Dinner Lunch Poultry

With juicy, crispy oven-baked chicken, cheese and marinara sauce, these chicken parmesan subs are the perfect grab-and-go meal! The hot Italian sandwich recipe is easy to make and will fill you up.

Ingredients

  • 2 chicken breasts, cut in half lengthwise and pounded to 1/2-inch thick pieces
  • 1/2 cup flour
  • 2 eggs, whisked
  • 1/2 cup panko
  • 1/2 cup Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups Botticelli Foods Marinara, plus extra for dipping (or your favorite marinara sauce)
  • 8-ounce log mozzarella cheese, cut into 1/2-inch thick slices
  • baguette or ciabatta rolls

Here's how to make it: 

  1. Combine the flour in a medium-sized bowl. Whisk eggs in a separate bowl and add breadcrumbs to their own bowl with the Parmesan and spices.
  2. Dip a piece of chicken in the flour mixture until it is coated on all sides, then dip the chicken in the egg bowl, again coating on all sides. Dip the piece of chicken in the breadcrumbs and press down until it is fully coated. Transfer the chicken to a plate and repeat the process with the remaining pieces of chicken.
  3. Place the chicken on a baking sheet lined with parchment paper. Spray lightly with olive oil cooking spray. Bake in a preheated 375-degree F oven for 15 minutes. Remove the chicken from the oven, top each piece with about 1/4 cup of marinara sauce and 1 to 2 slices of mozzarella.
  4. Bake the chicken for another 5 minutes, then broil for 1 to 2 minutes. Be sure to check on the cheese so it doesn't burn.
  5. Toast the bread and add 1/4 cup of sauce to the bottom of each baguette or roll. Place a piece of chicken on each roll, top with the top bun and serve.
