With a bag full of tiny new potatoes from the farmers market that needed to be cooked, I decided to try a new potato recipe. This Ukrainian recipe caught my eye because not only did I have tiny potatoes, but also fresh dill and chives, which are two of my favorite herbs to cook with. 

This easy low-sodium potato side dish recipe is super creamy – without being overly creamy. The cream is cooked into the potatoes, creating a silky smooth potato. The herbs add a delicious pop of freshness to dinner.

The easy potato recipe starts by boiling the potatoes until tender. Return the potatoes to the pot and add the butter and cream. Cook until the potatoes have absorbed all the butter and cream, then season with salt and black pepper. Toss in the fresh chopped chives and dill and cook a few more minutes. Easy, right?

  • 3 - 4 cups tiny potatoes (see Recipe Notes)
  • 2 tablespoons butter
  • 1/3 - 1/2 cup heavy cream
  • 1 - 2 tablespoons chopped fresh chives
  • 1 - 2 tablespoons chopped fresh dill

  • I cut the larger potatoes in half so they were all about the same size after cooking.
  • You could use dried dill and chives if you can't find fresh.
  • Store the potatoes in an airtight container in the fridge for up to four days.

Here's how to make it: 

  1. Boil the potatoes until tender, about 8 to 10 minutes. Drain and return to pot.
  2. Add the butter and cream. Cook, stirring often, until cream has absorbed into the potatoes. Season with salt and pepper.
  3. Add the chives and dill. Cook about 2 to 3 more minutes.
