This easy toffee cookie recipe has only four ingredients, and is super moist and full of toffee flavor. Be sure not to overbake the cookies – you want them super moist and chewy.

Ingredients
- 1 box (15 ounces) yellow cake mix
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup toffee bits
Here's how to make it:
- Combine all the ingredients in a mixing bowl until well combined.
- Roll into about 24 balls (about 2 tablespoons each). Place on baking sheets lined with parchment paper.
- Bake in a preheated 350-degree F oven for about 8 to 11 minutes or until just set (do not let them brown on the edges).
- Remove and cool about 5 minutes on the baking sheets before removing to cool completely.
