Ingredients
- 1 bunch asparagus (about 1 pound), washed and cut into 1- to 2-inch pieces
- 2 - 3 tablespoons extra virgin olive oil
- juice of half a lemon (you can use a whole lemon if you prefer more lemon flavor)
- 1 teaspoon minced garlic
- 1/3 cup freshly shredded Parmesan cheese, or to taste
Here's how to make it:
- In a large sauté pan, combine the olive oil, lemon juice and garlic. Add the asparagus and toss to coat. Sauté for 8 to 10 minutes, until asparagus is crisp tender.
- Season with sea salt and pepper. Top with the shredded Parmesan. Serve. Store any leftover asparagus in an airtight container in the fridge and reheat in the microwave.
