Ingredients
- 1 tablespoon olive oil
- 2 pork chops (about 1 1/2 inches thick)
- 4 cloves garlic, smashed
- 2 tablespoons butter
- 2 sprigs fresh thyme
Here's how to make it:
- Heat the olive oil in a cast iron skillet over medium-high heat. Season the pork chops with salt and pepper. Put the chops into the hot pan and cook until golden brown on both sides, about 1 minute per side. Repeat that process, flipping every 1 minute, until the internal temperature reaches 135 degrees F, about 8 minutes.
- Add the garlic, butter and thyme and cook, stirring up all the brown bits and basting the pork, for about 1 minute. Let the pork chops rest a few minutes before serving.
Note: If you are cooking thinner pork chops, adjust the cooking time.
