Store it in the refrigerator. I would use it within a week or so.

Is this like a lemon curd? Could you preserve this like lemon curd or a jam? Sounds delicious.

It's similar to lemon curd, but much thinner. If you processed it like jelly/jam, I don't see why you couldn't preserve it. Great idea.
