With ham, green onions and peas, this easy Cantonese fried rice recipe is a quick, light dinner or a hearty side dish. It's the perfect recipe to whip on on busy nights.

You could substitute chicken or shrimp for the ham. If you want a vegetarian dish, leave it out completely. Make a batch of crispy egg rolls to go with it.

Love fried rice!! Love the addition of melted butter. Adds a richness. I do think I'm going to substitute chicken for the ham. :-)
