To make these vegan mashed potatoes you will need Yukon gold potatoes, garlic, vegetable broth and olive oil.

  • 1 1/2 pounds Yukon Gold potatoes, cut into chunks
  • 4 - 5 cloves garlic, peeled and ends trimmed
  • 1/2 cup vegetable broth
  • 1 tablespoon olive oil
  • chopped fresh chives (optional)

  • If you're not concerned about this recipe being vegan, you can use chicken broth.
  • Russet potatoes could be used instead of Yukon gold.
  • For fluffy mashed potatoes, whip with an electric mixer.
  • You could stir the chopped fresh chives into the potatoes instead of just sprinkling for a garnish.

Here's how to make it: 

  1. Boil the potatoes and garlic in salted water until very tender, about 20 minutes. Drain.
  2. Add the broth and olive oil. Mash. Season with salt and pepper. Garnish with chopped chives, if desired.
