Unfortunately, this will not result in receiving the health benefits from fermented sauerkraut because sauerkraut that is canned is not fermented. The heat involved in canning destroys any probiotic benefits of your sauerkraut. Canning: Kills beneficial bacteria. The benefits of probiotics are lost when fermented sauerkraut is heated above 106° F (41.1° C). Always look to buy the sauerkraut that is in the refrigerated section as this is most likely not pasteurized and therefore is fermented

Not everyone wants to read such alarmist warnings on every recipe they'd like to make. Most people with well-rounded diets do well enough with nutritional values (including probiotics) because they know how to incorporate balance into their weekly meals. So the outcome of one single recipe isn't going to be that harmful, even if it's too high or too low in specific values. And this recipe sounds like it's worth a try, even with canned sauerkraut (which I have used all my adult life and never had any health issues). Thank you for convincing me to make this recipe.

I grew up eating canned sauerkraut, too, Vickie Parks . My German dad would eat it straight out of the can. :-) But very interesting information, Scott Pearl . I didn't know that!

Hmm they lost me on this "Amish" recipe when the said cook in slow cooker.... ummm Amish don't use slow cookers. They don't have electricity!

@ Donna John... I'm 65 & I STILL eat it out of the can, whenever I open one 🤗. My dad couldn't stand the stuff, or the smell, so my 1st gen German-Canadian mom fed it to my sibs & I when he worked afternoon shift. I ❤️sauerkraut, so looking forward to trying this...my lazy man's cabbage roll casserole can wait!
