If you can pickle a cucumber, why can't you pickle a pumpkin? This fun pumpkin pickle recipe is crunchy and spiked with cinnamon and cloves. You could add fresh peppers for some spice or garlic cloves. We bet this special side dish will become a fall family tradition.

Servings: Makes approximately 2 jars

Ingredients

Here's how to make it:

  1. Put the pumpkin cubes into a bowl. Pour the water and vinegar over the pumpkin. Cover and allow it to sit for at least 2 hours.
  2. Pour the pumpkin and juices into a large pot. Add the sugar, cinnamon stick and cloves. Bring to a boil and simmer for 20 to 25 minutes or until pumpkin is soft. 
  3. Ladle the pumpkin into mason jars. Pour the liquid over to fill. Put on the lids. Cool completely before refrigerating. 

Note: You could sterilize the jars if you plan on storing for a long period of time.
