Crust
- 1 cup flour (all-purpose or 1:1 gluten-free flour)
- 1 stick (8 tablespoons) butter, softened
- 1/4 cup powdered sugar
Lemon Filling
- 2 eggs, room temperature
- 1 cup granulated sugar
- 2 tablespoons flour
- 1/2 teaspoon baking powder
- 2 1/2 tablespoons lemon juice
- 1 1/2 teaspoons lemon zest
Here's how to make it:
- Combine the flour, butter and powdered sugar until it is fully combined. Press into the bottom of a square baking pan. Bake in a preheated 350-degree F oven for about 20 minutes.
- To make the filling, beat the eggs in a bowl. Add the sugar, flour, baking powder, lemon juice and lemon zest. Whisk together well. Pour the mixture over the crust. (Fresh is always best, especially in lemon desserts, so squeeze fresh lemon juice.)
- Bake another 25 minutes or until golden. Cool. Dust with powdered sugar and then cut into bars. Garnish the lemon bars with powdered sugar, fresh berries and/or lemon zest, if desired. Store the bars in an airtight container to keep them fresh.
