Ingredients

  • 3 tablespoons cornstarch
  • 1 cup whole milk
  • 3/4 cups sugar
  • 1 cup heavy cream
  • 3 egg yolks
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest

Here's how to make it:

  1. Dissolve the cornstarch in a little of the milk until smooth.
  2. Put all the ingredients, including the cornstarch slurry, into a saucepot. Whisk to combine. Cook over medium heat , stirring constantly, until it just begins to boil and thicken. Turn off the heat.
  3. Pour the pudding through a mesh strainer into a bowl. Cover and refrigerate until cold.
