Cook Time: 5 minutes
Total Time: 15 minutes
Servings: 4

Ingredients

Mushrooms

  • 2 tablespoons olive oil
  • 1 -  2 cups chopped fresh mushrooms
  • 2 cloves garlic, minced
  • chopped fresh thyme

Hummus

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 2 teaspoons lemon juice
  • 1/3 cup tahini
  • olive oil, for topping

Here's how to make it:

  1. To cook the mushrooms, heat the olive oil in a skillet. Add the mushrooms and cook until softened, about 5 minutes. Add the garlic and thyme leaves and cook 30 seconds more. Season with salt and pepper. Set aside.
  2. Add all the hummus ingredients to a blender. Pulse until smooth. Add a little water if it's too thick. Season with salt and pepper. Put the hummus into a bowl. Stir in the cooked mushrooms. Drizzle the top with olive oil.

Variation: Spread the hummus into a baking dish. Top with the mushrooms and drizzle with the olive oil. Bake in a 350-degree F oven for about 10 minutes or until hot. Garnish with thyme leaves.
