Cuisine: American
Prep Time: 5 minutes plus 30 minutes to marinate
Cook Time: 6 to 10 minutes
Total Time: 15 minutes
Servings: 4
Ingredients
- 2 - 4 salmon fillets
- 1/4 cup red pepper jelly
- 1/4 cup soy sauce (or tamari)
- 1 tablespoon sesame oil
- 1 teaspoon vegetable oil, for cooking
Here's how to make it:
- Combine the red pepper jelly, soy sauce and sesame oil in a plastic zipper bag. Add the salmon fillets. Marinate in the refrigerator for at least 30 minutes. (If you don't have time to marinate the salmon, that's fine! For a gluten-free dinner, use tamari instead of soy sauce.)
- When ready to cook, remove the fish from the marinade. Heat the vegetable oil in a nonstick pan or oil a grill pan. Cook the salmon over medium heat for about 3 to 5 minutes per side or until golden and cooked through. (The USDA recommends cooking salmon to 145 degrees F internal temperature on a food thermometer.) Serve with additional red pepper jelly.
