Skate is a fish that has a texture similar to crabmeat. The edible part of the skate is called the "wings." If you've never eaten skate, this easy skate with capers recipe is a good one to start with.

Ingredients

  • 1 - 2 pounds skate, skinned and cut into fillets 
  • 2 tablespoons butter
  • 4 tablespoons capers
  • fresh chopped parsley, for garnish

Here's how to make it: 

  1. Heat the butter in a skillet over medium-high heat. Season the skate with salt and pepper. Cook in the hot oil in a single layer for about 2 minutes on the first side. 
  2. Flip them over and add the capers (they should sizzle). Cook about 2 to 3 more minutes. Season with salt and pepper. Serve immediately.
