This easy low-sodium muffin recipe is simple to throw together and bakes in 20 minutes. If not, here is your short shopping list: all-purpose flour (for gluten-free muffins, use gluten-free flour), granulated sugar, baking powder, salt, milk, vegetable oil, an egg, vanilla extract and chocolate chips.

Ingredients

• 1 3/4 cups flour
• 2/3 cup granulated sugar
• 2 teaspoons baking powder
• dash of salt
• 3/4 cup milk
• 1/4 cup vegetable oil
• 1 egg
• 1 teaspoon vanilla
• 1 cup chocolate chips

Recipe Notes

• For gluten-free muffins, use gluten-free flour instead of all-purpose flour.

• Use whatever type of chocolate chips you like. Bittersweet, dark, semisweet or milk chocolate are all delicious.

• Store the muffins in an airtight container to keep them fresh. 

Here’s how to make it:

1. Combine the flour, sugar, baking powder and salt.
2. In another bowl, combine the milk, oil, egg and vanilla.
3. Add the wet ingredients to the dry ingredients. Fold in the chocolate chips.
4. Pour the batter into muffin tins that have been sprayed with nonstick cooking spray or lined with baking liners. Bake in a preheated 350-degree F oven for about 20 minutes.
