This looked really good so I gave it a whirl last night--well, sort of... I didn't have and didn't want chicken with the added salt, and so I oven roasted some fresh asparagus and sliced mushrooms and used those (in addition to the spinach and green onions), and then used low fat sour cream and low fat cheddar cheese (in addition to the fat-free Greek yogurt). YUMMY! I did get a mild sideways glance from my hubby when I told him I was making chicken enchiladas but substituting asparagus for the chicken.... He knows me well enough to not be too surprised, and he really liked the outcome, too! And leftovers for tonight for the win!
