Creamy Garlic Pasta Recipe: This Easy Vegetable Pasta Recipe Was Inspired By TikTok’s Baked Feta Pasta (You Will Crave It) Pasta Dinner

Inspired to make the easy feta cheese and tomatoes pasta recipe that went viral on TikTok, I looked in my refrigerator to see if I had the right ingredients. I didn't have feta, but I did have Boursin creamy garlic cheese spread – and that became my new hack for making a creamy garlic pasta sauce that is to die for! To ease my guilt at taking in the extra calories added from the cheese, sour cream and butter, I loaded up the sauce with a lot of healthy vegetables. My husband and I loved it, and I plan on making this recipe again and again. It's crave-able!

You'll need:

  • 1 box of your favorite pasta, cooked according to package directions (I made rotini for him, and gluten-free spaghetti for me)
  • 1/4 cup olive oil
  • 1 teaspoon minced garlic (optional, but I used it to sauté the vegetables)
  • 1 box Boursin garlic cheese spread
  • 1/2 cup sour cream 
  • 2 tablespoons butter 
  • 1 bunch broccoli, chopped 
  • 1 large tomato, diced 
  • 1 red pepper, diced 
  • 1/2 package baby spinach (or to taste) 
  • 1 cup reserved pasta water (you can add more if you prefer a thinner sauce) 
  • shredded Parmesan cheese (optional)

Here's how to make it:

While pasta is cooking, pour the olive oil into a large skillet or deep pan (I used a Cuisinart sauté pan). Add the minced garlic. On low heat, as oil and garlic begin to sizzle, add the broccoli and red pepper. Sauté for a couple of minutes. Next, add the tomato. Sauté for a couple more minutes. Add 2 tablespoons of butter to the mixture and stir until melted. Add the Boursin cheese, and stir until melted and blended. Add the sour cream, and stir until melted and blended.

Add the cup of pasta water slowly, stirring to blend everything together. You can add more or less water, depending on how thick or thin you want your sauce. Let the mixture simmer for a couple of minutes, cooking until vegetables are crisp-tender.

Add the spinach, then stir until it is wilted (it only takes about a minute). Remove from heat. Serve on top of pasta. Sprinkle a dash of salt and pepper on top. I also topped mine with some shredded Parmesan cheese, which boosted the flavor even more, but my husband skipped it. This recipe makes enough for leftovers (thank goodness)!
