An Italian Grandma's Tender Ricotta Cookies Recipe: Life Is Good Cookies Desserts

Moist, tender ricotta cookies are a popular dessert in Italy. There are many variations of the recipe, and they are passed down from generation to generation. Here's an easy grandma-approved ricotta cookie recipe to try. It's made with flour, baking powder, baking soda, butter, brown sugar, granulated sugar, an egg, vanilla, ricotta cheese and mini semisweet chocolate chips. The cookies bake in the oven for about 10 minutes, then are cooled. So easy.

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • dash of salt
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 cup ricotta cheese
  • 2 cups mini semisweet chocolate chips

Here's how to make it: 

  1. Combine the flour, baking powder, baking soda and salt in a bowl. 
  2. In another bowl, cream together the butter and sugars with an electric mixer. Add the egg, vanilla and ricotta. Mix well.
  3. Slowly start adding the flour mixture to the wet mixture. 
  4. Fold in the chocolate chips. 
  5. Drop the dough by teaspoons full onto baking sheets that have been lined with parchment paper. Bake in a preheated 350-degree F oven for about 10 to 12 minutes, or until the bottoms begin to get lightly browned. Remove and cool.
