Here is your shopping list for this powerhouse salad: frozen edamame, a can of cannellini beans or great northern beans, cherry tomatoes, olive oil, celery, shallots, red onion, red wine vinegar, lemon zest, parsley, fresh oregano and garlic. Ingredients

Vinaigrette 

  • 1/3 cup olive oil
  • 1/3 cup finely chopped celery
  • 1/4 cup chopped shallots
  • 1/4 cup chopped red onion
  • 3 tablespoons red wine vinegar
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped flat-leaf parsley
  • 1 tablespoon chopped fresh oregano
  • 2 cloves garlic, minced

  • Be sure to rinse the white beans well to remove any "canned" taste from them.
  • You could whisk all the vinaigrette ingredients together in a separate bowl before adding to the beans.

I made this for our July 4th get-together and it was a hit. Very refreshing and the perfect side dish for my two vegan kids. If they weren't there, I may have added some freshly grated Parmesan cheese. Also, I grow mint and will add some to the dressing next time.
