When cooking for St. Patrick's Day, why not add a German touch with some festive green spaetzle? Spaetzle is to Germans what pasta is to Italians. Spaetzle is an egg noodle that's popular in Europe, especially in Germany, Austria, Switzerland and Hungary. This spaetzle recipe gets its green color from spinach and is topped with a two-ingredient cheese sauce recipe.
Pureed spinach is mixed with water, flour, semolina flour, fresh minced or grated garlic and an egg. The low-calorie, low-sodium dough is pushed through a cheese grater or colander into boiling water. The spaetzle is done with it floats to the top. The two-ingredient cheese sauce is made with half and half and grated white cheddar cheese. The two are melted together in a saucepot until creamy. Such a simple side dish that's ready in about 30 minutes!
Crisp prosciutto or bacon (or corned beef!) would be a nice garnish for this spinach spaetzle. - 1 cup flour

Here’s how to make it:
- Put the spinach and water into a blender and blend until smooth. (You should have about 1 cup or pureed spinach.) Pour it into a mixing bowl.
- Add both flours, garlic and egg. Season with salt and pepper. Mix well.
- Hold a cheese grater or a colander with large holes over a pot of boiling, salted water. With a spatula, push the spinach mixture through the holes and into the boiling water. Allow to cook for about 2 to 3 minutes, or until they float to the top. Drain.
- For the cheese sauce, pour the half and half into a pot and simmer until it thickens. Remove from heat and add the cheese. Stir until melted. Season with salt and pepper. Serve over the spaetzle.
