When Hurricane Harvey hit Houston in 2017, my daughter and grandson rode the storm out at my house. Our house did not flood, but we were flooded in the neighborhood for almost a week. We were lucky enough to have a generator, so when boredom set in, we started cooking. Homemade pasta was our first challenge – and a successful one!
This is the basic egg pasta recipe from the instruction booklet with my KitchenAid pasta attachment. This easy recipe was the perfect one for a first-time pasta maker. If you don't have a KitchenAid stand mixer, no worries. This pasta dough recipe can be made with any stand mixer and pasta roller, or even by hand.
When I got my pasta attachment for Christmas, I went on an Amazon shopping spree and bought pasta drying racks, pasta cutters and a ravioli maker. Drying the pasta is not a necessary step (though you can do it), but the pasta rack is handy to hold the noodles while you make more. We made spaghetti noodles, fettuccine and ravioli, too, which was fun to do and tasted amazing (recipe coming soon!).
Serve the fresh pasta noodles with your favorite sauce. Try alfredo sauce, homemade spaghetti sauce, vodka sauce or baked feta tomato sauce. Once you make homemade pasta, you will want to make more and more. It really does make a difference.

Cook Time: 2 to 5 minutes (fresh pasta) and 7 minutes (dried)

Servings: Makes about 1 1/4 pounds
Ingredients
- 4 large eggs
- 3 1/2 cups sifted all-purpose flour
- 1 tablespoon water
- 1 teaspoon salt
Here's how to make it:
- Break the eggs into a measuring cup. Make sure you have 7/8 cup (207 ml). If less than 7/8 cup, add water, 1 teaspoon at a time, until measurement is reached.
- Place flour and salt in a stand mixer bowl. Attach the flat beater. Turn to speed 2 and gradually add the eggs and 1 tablespoon of water. Mix for 30 seconds. Stop the mixer and put on the dough hook. Continue on speed 2 and knead for 2 minutes. Let the dough rest for 20 minutes.
- Divide the dough into four pieces. Put into the pasta roller and cut into desired noodles.
- To cook the pasta, add 2 teaspoons salt and 1 tablespoon oil (optional) to a large pot of boiling water. Gradually add the pasta and boil until pasta is al dente or slightly firm to the bite. Pasta will float to the top of the water when cooked evenly. Drain in a colander.
Notes: If you dry the pasta, it takes about 7 minutes to cook. Fresh, undried pasta, takes between 2 and 5 minutes to cook.
