Spinach is great for digestion – it contains fiber, potassium and calcium, as well as magnesium. (Spinach has other health benefits, too!) This creamy spinach soup recipe can be served hot or cold, for lunch or dinner

This easy gluten-free spinach soup recipe is a great way to get vegetables into any picky eaters you may have. To make this healthy soup you will need spinach and heavy cream. That's the basic recipe. To add even more flavor, grab some garlic and tomatoes. 

Serve this heartwarming two-ingredient vegetarian spinach soup with pita, bread sticks or butter crackers. For kids, I suggest bread sticks or butter crackers to dip into the soup and to make mealtime fun. For adults, you can use toast points or top with croutons.

Ingredients

  • 4 cups spinach, sliced and packed
  • 1 tablespoon heavy cream (see Recipe Notes)

Optional Ingredients

  • 1/2 clove garlic, finely chopped
  • 1/4 cup tomatoes, cubed 
  • pinch of salt and black pepper

  • Instead of heavy cream, you can substitute cow or goat milk or unsweetened vegan milk, but soup will be thinner.
  • For a little spice, add some crushed red pepper flakes.
  • This recipe can easily be doubled to feed four.
  • Store leftovers in an airtight container in the refrigerator.

Here’s how to make it:

  1. In a small pot or in a steamer basket, steam the spinach (add tomatoes and/or garlic, if using, on the top of the spinach). Cook for a few minutes until fully wilted.
  2. When the spinach, garlic and tomatoes are cooked, put them in a mini food blender or use a hand immersion blender to puree, reserving the cooking liquid from the steaming process.
  3. Add the heavy cream, salt (if desired) and some of the cooking liquid to bring the soup to the desired consistency and taste. Blend.
