4 Protein-Packed Breakfast Recipes for Your Family (Skip the Cereal)! Breakfast

I used to feed my kids what I considered to be a healthy breakfast: whole grain waffles, pancakes, cereal or oatmeal. Two years ago my son was having focus issues and I was learning more about the Paleo diet (less sugar/grains and a healthier fat/veg/protein). Sugar was a real concern and although I didn't buy sweet cereals, I realized what they were eating was being converted into sugar.

We started phasing out carbs (but not entirely) and began a new routine. It has made a difference. Why not try one or two of these to mix it up a bit?

  • Sweet Potato Hash: Cook onion and shredded sweet potato with thyme, salt and pepper in olive or coconut oil until potato is soft.
  • Sausage, Spinach and Tomato Sauce Scramble: Cook sausage (breakfast or Italian) in a large pan and then add frozen chopped spinach and tomato sauce.
  • Veggie Egg Cups: Line 12 muffin tins with cupcake liners. Place cooked veggies in the cups and then whisk 6 eggs with salt and pepper and pour into cups. Bake 20-25 minutes at 425 degrees F until puffed and golden.
  • Green Smoothie: Combine avocado, cucumber, spinach, ginger, almond or canned coconut milk in a blender. Pulse until smooth.
