Ever since "The LEGO Movie," my kids bug me for Taco Tuesday any night of the week. However, there can be so many calories in tacos. Here's one way I found I can enjoy this meal with my family:
- I either make a spinach/kale base or use whole romaine lettuce leaves.
- I sprinkle my ground turkey taco meat, onion, white kidney beans with less than 1/8 cup of cheese over my choice of greenery.
It comes in at less than 400 calories, about 35g of protein and 7g of fiber. A filling meal without the guilt! (Just don't eat the shell!)
