Ramen noodles are an inexpensive ingredient that is usually the star of the show as part of the main dish. This quick garlic ginger ramen recipe gets the noodles out of the bowl as a side dish. This simple ramen recipe in ready to roll in less than 10 minutes, and is full of those Asian flavors we love.

To make this budget-friendly noodle side dish recipe you only need a handful of simple ingredients from your fridge and pantry. Here is what to grab for this no-fuss Asian recipe: instant ramen noodles (toss the seasoning packets or save for another use), fresh garlic (check out the health benefits of garlic), fresh ginger (read about the health benefits of ginger), green onions (scallions), low-sodium soy sauce or gluten-free tamari, chicken broth, sesame oil, sweet chili sauce and optional sriracha sauce if you want a little heat.
The high-protein gingery, garlicy noodles are the perfect side dish for any protein. I served mine with my crispy whole ramen-seasoned chicken.

Ingredients
- 6 ounces (2 packages) instant ramen noodles (discard the seasoning packets)
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced, or 4 frozen ginger cubes
- 5 - 6 green onions (1 bunch) chopped (save some for garnish)
- 1 tablespoon olive oil
- 1/4 cup low-sodium soy sauce or tamari
- 2 tablespoons chicken broth
- 2 teaspoons sesame oil
- 1 tablespoon sweet chili sauce
- sriracha, to taste (optional)
Here's how to make it:
- Cook the ramen according to package directions. Do not use the seasoning packet! Drain and set aside.
- Heat the olive oil in a skillet over medium heat. Add the garlic, ginger and green onions. Cook, stirring often, for about 2 minutes.
- Stir together the soy sauce or tamari, chicken broth, sesame oil, sweet chili sauce and sriracha, to taste if using, in a small bowl. Pour the mixture into the pan. (For a vegan side dish, use vegetable broth instead of chicken broth.)
- Add the cooked ramen noodles.
- Stir to combine. Taste and add more soy sauce or other ingredients if needed to suit your tastes.
- Serve. Garnish with more green onions, if desired. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
