I'm still obsessed with my ramen seasoning blend. My crispy baked chicken ramen recipe, which used dry ramen seasoning, is still my favorite new recipe this month. With a whole chicken thawing for dinner, my mind drifted all day deciding on how to season it. And you guessed it, the chicken was yellow before being popped into the oven that evening. Now there's a toss up on which recipe is my favorite this month. This crispy whole baked ramen-seasoned chicken recipe was juicy, moist, rich and so delicious.

To make this budget-friendly ramen roasted chicken dinner you will need just three simple ingredients. Here is your short shopping list for this high-protein recipe: a whole chicken (read about the health benefits of protein), dry ramen seasoning and olive oil.

Cooking Tip: There are several ramen seasoning blends on the market. This baked chicken recipe was created using Ramen Buddy, which has a deep, rich and savory flavor but is not overly salty. Before you season the chicken for this recipe, be sure to taste your brand. If it's salty, adjust the amount of seasoning you use.

Carve up the rich, juicy roasted chicken for dinner and serve with your favorite side dishes. I kept with the ramen theme and served garlic sesame ramen on the side. Delish! But a fresh vegetable or a grain like quinoa or jasmine rice would be equally delicious.

Ingredients

• 1 3- to 4-pound whole chicken, spatchcocked
• 2 - 3 tablespoons dry ramen seasoning (I used Ramen Buddy)
• olive oil, for drizzling

Here's how to make it: 

1. If you want to spatchcock your chicken, simply use kitchen shears to remove the backbone. Flip the chicken over and press down to flatten it out. Your chicken should be laying flat. This step is optional, but does help the chicken cook faster and all of the skin gets crispy. If you don't spatchcock the chicken, it will take longer to bake.
2. Season the chicken all over liberally with the ramen seasoning. Place the chicken in a baking dish or ovenproof skillet. (I used a cast iron skillet.)
3. Drizzle the chicken with a little olive oil.
4. If you want, insert a cooking thermometer into the thickest part of the breast.
5. Bake in a preheated 350-degree F oven until chicken is golden, crispy and cooked through, about 40 to 45 minutes. Cooking time will be determined by size of chicken and your oven. Chicken is cooked through at 165 degrees F internal temperature at the thickest part of the chicken.
6. Remove the chicken from the oven and let it rest a few minutes before cutting into pieces.
