You need another scrambled egg recipe in your life! More and more I've been reading about the amount of protein recommended for post-menopausal women, but really almost everyone benefits from a high protein breakfast. I have added cheese to my eggs before, but I had never thought about the adding the protein-packed deliciousness of cottage cheese.
This 10-minute egg recipe combines just two ingredients to give you a powerhouse jumpstart your day. This breakfast recipe doesn't spike your glycemic index, and may keep your blood sugar steady and your energy up until lunchtime. These eggs also make a delicious, quick and easy high-protein snack.
No fancy ingredients for this high-protein recipe. Here are the two ingredients you will need for this gluten-free and low-carb breakfast: fresh eggs (read about the health benefits of eggs) and cottage cheese. You can serve the high-protein eggs any way you like. Ingredients
- 2 eggs (we prefer organic eggs)
- 1/2 cup whole milk cottage cheese (we prefer organic cottage cheese)
- salt and black pepper, to taste (optional)
Optional for Serving
- sourdough bread
- avocado, sliced
- cherry tomatoes, sliced
Here's how to make it:
- Place a skillet over medium heat with a bit of olive oil or butter in the bottom, if needed or desired.
- Whisk the eggs and cottage cheese together in a bowl using a small whisk or fork. (If you prefer you can blend the cottage cheese first in a blender to make it smoother.)
- Pour eggs/cheese mixture into the hot pan. Stir the eggs occasionally and cook for 5 to 7 minutes, or until cooked through. Eggs will be a bit softer than normal due to the higher moisture count in the cheese. Serve.
