Here are the five simple ingredients you'll need in order to make this flavorful slow-cooker chicken recipe: hoisin sauce (or gluten-free hoisin sauce), honey, rice vinegar, fresh ginger and thin-sliced chicken breast. The green onions are an optional garnish (check out the health benefits of scallions). You combine the sauce ingredients, then coat the chicken in the sauce in the slow cooker. Ingredients
- 3 tablespoons hoisin sauce (or gluten-free hoisin sauce)
- 3 tablespoons honey
- 2 teaspoons rice vinegar
- 3 tablespoons fresh ginger, diced
- 2 pounds thin-sliced chicken breast
- salt and pepper, to taste (optional, but I used about 1/2 teaspoon of each)
- fresh scallions, for garnish (optional)
Here's how to make it:
- In a medium mixing bowl, add the hoisin sauce, honey and rice vinegar. Add salt and pepper, to taste, if desired. Whisk to combine. (To make this recipe gluten-free, use gluten-free hoisin sauce.)
- Add the ginger and stir to combine.
- Place the chicken into the slow cooker and pour the sauce over it. Toss to coat and ensure that chicken is covered in the sauce. (I used thin-sliced chicken breast, but you also could use regular chicken breast and simply adjust cooking time as needed.)
- Cover the slow cooker with the lid and cook on low heat for 2 to 3 hours (slow cookers vary). Chicken is done when it reaches 165 degrees F on a food thermometer.
- Stir chicken to combine it with the sauce. Serve as is, or remove the chicken to a plate, then pour the sauce into a saucepan and simmer it until it thickens even more before serving it over the chicken.
- Serve over rice and garnish with fresh scallions, if desired.
- Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
