Quick and easy one-pan casserole recipes grab my attention for weeknight dinners. My friend Elisa's high-protein cheddar broccoli ground chicken casserole recipe made my stomach growl, but my refrigerator did not have a drop of Greek yogurt in it. So I raided my pantry and made some tweaks to her delicious one-pan casserole recipe. My creamy double broccoli and cheese chicken casserole is so delicious and comforting!
To make this one-pan recipe you only need seven simple ingredients. Here is what to grab from your fridge and pantry for this comfort food dinner: ground chicken (read about the health benefits of protein), olive oil, fresh broccoli (check out the health benefits of broccoli), onion, fresh garlic, a can of condensed cream of broccoli soup and cheddar cheese.
Gluten-free Note: Not all condensed soups are gluten-free. To make this a gluten-free dinner, buy gluten-free condensed soup or use Greek yogurt or sour cream instead.
This creamy chicken casserole is delicious on its own for dinner or serve over quinoa, rice or pasta. I served mine over fragrant jasmine rice with a salad as a side dish. This meal actually doesn't need a side dish, but who can resist a healthy salad?

Ingredients
- 1 tablespoon olive oil
- 1 pound ground chicken
- 2 cups broccoli florets, cut small
- 1 onion, chopped
- 4 cloves garlic, minced
- 10.5 ounces (1 can) cream of broccoli soup
- 2 cups cheddar cheese or Monterey Jack (or a combination), grated (divided)
Here's how to make it:
- Heat the olive oil in an ovenproof skillet. (I used a cast iron skillet.) Add the ground chicken, broccoli florets, onion and garlic.
- Cook, breaking up the chicken as you stir, until chicken is just cooked through.
- Add the can of cream of broccoli soup and half of the cheese. Season with black pepper, if desired. (You can add salt, too, but I chose not to. If you can't find cream of broccoli soup, you could use cream of chicken, cream of mushroom, cream of celery or even Greek yogurt or sour cream.)
- Stir to combine. Bake in a preheated 400-degree F oven for 15 minutes.
- Top with the remaining cheese.
- Bake about 5 minutes more, or until cheese has melted.
- Serve as is or over rice or pasta.
- Store any leftovers in an airtight container or freeze for quick dinners later.
